A Little Bit of Catch-Up.

Hello again to my lovely followers (all two of you).  I see that it has been quite a long time since I've posted, and for that, I apologize.  I have quite a bit of stuff to catch you up on, so sit back, relax, and enjoy.

I passed my National American Veterinary Licensing Exam (aka National Boards), and I was also offered an internship in Elgin, TX.  I will now be one of two equine interns at an amazing hospital as of June!!  I'm so blessed!!

I also finished clinics at the end of March, and now I'm in my "off-quarter".  I already completed an externship at an equine clinic here in Ohio, and I loved it there.  Everyone was so nice and made me feel right at home, AND I was able to see a lot of super cool cases!  My other externship is at the end of May in Texas, and I'm super pumped about it.  I take my Texas State Board Exam on June 6th, so I hope that goes well.  Oath and Hooding is June 11th, and graduation is June 12th.

As far as my diet, the title of this whole blog says it all.  I'm a giant heifer.  I haven't been watching what I eat, unless you count me watching food as I put it in my mouth.  I'm back to being the fattest that I've ever been, and quite frankly, I'm embarrassed.  I'm disappointed in myself for my complete lack of self-control, and I'm disgusted that I let myself get like this again.  Looking at my giant thighs, my huge gut, and my enormous spare tire makes me want to puke.  So, starting today, I'm on the road to a healthier and skinnier me.  I haven't decided whether or not I should post my actual weight on here to monitor my progress and hold myself accountable, so comment and let me know your opinion!

So far today I had:
~ 2 small Tollhouse cookies for breakfast (because I'm cool like that)
~ A tasty salad consisting of:
     * 2 cups of baby mixed greens
     * 1/3 cup of Great Value 2% Reduced Fat Fiesta Blend Shredded Cheese
     * 2 ounces of 98% Fat Free Eckich Virginia Brand Ham
     * A large tomato
     * 2 Tbs. of Kraft Light Zesty Italian Dressing

It was extremely tasty, but I'm still a bit hungry.  I'm going to sit here for about 20 minutes and drink a bunch of water to see if that helps curb my hunger.  In addition, I'll kick back and watch VH1's 40 Most Slimmed Down Celebs for some motivation.

I also started doing some Zumba DVDs that Barb bought months ago.  Today I did the Abs, Buns and Thighs DVD which is about 30 minutes long.  Although it wasn't difficult, I can bet that I'll be feeling it tomorrow.  Tomorrow I'm planning on trying the Rapido! DVD, so we'll see how that goes.  I can just see my fat sloshing around, jiggling with each dance move, and creating tidal waves of lard splashing over the giant shores of my body.  Oh well.  That's why we got the DVDs.  I'm not doing this crap in front of a bunch of skinny wenches who do nothing but exercise anyway.

On another note, dinner smells awesome.  I'm making a pork loin in the crockpot, and it seems pretty darn healthy.  The pork loin is very lean, and I rubbed it with Worcestershire sauce and sprinkled it with Lawry's Seasoned Salt.  I then tucked it into a bed of sauerkraut and dumped two cans of French onion soup over the whole thing.  It smells sooooooo good right now, and it's making my mouth water.
